介紹：

支鏈淀粉白色粉狀，又稱膠淀粉。支鏈淀粉是以優質糯玉米為原料生產的一種純天然支鏈淀粉。與普通淀粉相比具有較高的膨脹性、粘滯性和透明度，其膨脹性是普通淀粉的２·７倍。普通淀粉溶液很不穩定，貯存時逐漸變成混濁，膠粘性降低，*后出現白色結晶沉淀。而支鏈淀粉很容易溶于水生成穩定的溶液，且具有很強的粘度，不易發生老化，淀粉液在貯存過程中，不發生沉淀。支鏈淀粉是一個具有樹枝形分支結構的多糖。相對分子質量較大，一般由1000－300,000個左右葡萄糖單位組成，分子量約為100萬，有些可達600萬。D－吡喃葡萄糖單位通過α－1,4－苷鍵連接成一直鏈，此直鏈上又可通過α－1,6－苷鍵形成側鏈，在側鏈上又會出現另一個分支側鏈。主鏈中每隔6－9個葡萄糖殘基就有一個分支，每一個支鏈平均含有約15－18個葡萄糖殘基，平均每24－30個葡萄糖殘基中就有一個非還原尾基。因此支鏈淀粉的結構為高支化聚合物，十分復雜。"
